You know what's good?

Vegetable Alicha -

Saute 2 medium chopped onions in 4 TBS oil
Add 4 carrots, a bunch of potatoes, and a few green peppers
Add Garlic and fresh Ginger, and salt
Add 3 cups water

Cook on low for 15 minutes

Add a bunch of cabbage (like, one small head cut into 1" wedges)

Cook on low for 45 more minutes

It's always my favorite on the veggie platter, and you can make it just as nice at home!
